2 Russet Potatoes (cubed)
1 Red Bell Pepper (diced)
1 Yellow Bell Pepper (diced)
1 Sweet Yellow Onion (diced)
1 Garlic Clove (minced)
1/4 Cup Light Olive Oil
Salt & Pepper (to taste)
Toss all ingredients in a large casserole dish and roast in a 375 degree oven for 30-40 minutes or until golden and tender. Check every 10 minutes and turn mixture with spatula to ensure even cooking. Scrumptious!
